Poblano Pepper Poppers
Updated: 5 days ago

Ingredients
12 fresh poblano peppers
8 oz cream cheese, softened
1 cup shredded cheddar cheese
1/2 cup cooked and crumbled bacon
2 cloves garlic, minced
1 tsp cumin powder
1 tsp chili powder
Salt and pepper to taste
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
Old Pueblo Poblano Authentic Hot Sauce, to taste
Cooking spray
Directions
Preheat your oven to 375°F (190°C).
Start by washing the poblano peppers, then carefully cut the tops off and remove the seeds and membranes. You can leave the stems intact for a nice presentation.
In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, minced garlic, cumin powder, chili powder, and a few dashes of Old Pueblo Poblano Authentic Hot Sauce. Mix until everything is well combined. Taste the mixture and adjust the spiciness with more hot sauce if desired. Season with salt and pepper to taste.
Carefully stuff each poblano pepper with the cream cheese mixture, making sure not to overfill them.
In a separate bowl, combine the breadcrumbs and grated Parmesan cheese.
Dip each stuffed poblano pepper into the breadcrumb and Parmesan mixture, pressing gently to coat them evenly.
Place the stuffed and breaded peppers on a baking sheet lined with parchment paper or a silicone baking mat.
Lightly spray the tops of the peppers with cooking spray. This will help them become crispy and golden brown in the oven.
Bake in the preheated oven for about 20-25 minutes or until the peppers are tender and the breadcrumb coating is crispy and golden brown.
Serve your Poblano Pepper Poppers hot with a side of Old Pueblo Poblano Authentic Hot Sauce for dipping.
