Spanish Beef Hash
Total Time Prep: 40 min. Cook: 30 min. Makes 6 servings

INGREDIENTS
1 pound ground beef
2 cups chopped yellow, red and/or green peppers
1 small onion, chopped
2 garlic cloves, minced
3 small potatoes, peeled and cut into 3/4-inch cubes
2 medium tomatoes, chopped
1 can (8 ounces) tomato sauce
1/2 cup sliced fresh mushrooms or can mushrooms (drained)
1/2 cup beef broth
1 tablespoon Worcestershire sauce
1 tablespoon Old Pueblo Poblano Authentic Hot Sauce
1-1/2 teaspoons reduced-sodium soy sauce
1/2 teaspoon dried oregano
1 teaspoon pepper
1/2 teaspoon salt
Hot cooked rice (6 servings)
DIRECTIONS
In Large Pot or Dutch oven, combine beef, peppers, onion and garlic and cook over medium heat until meat is cooked; drain. Add tomatoes, tomato sauce, potatoes, mushrooms, broth and seasonings.
Bring to a boil. Reduce heat; simmer, uncovered, for 30-35 minutes or until potatoes are tender. Serve with rice.
