Spicy Tortilla Soup

  • 1 tablespoon olive oil

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 1 bell pepper, diced

  • 1 carrot, diced

  • 1 zucchini, diced

  • 1 cup corn kernels (fresh or frozen)

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) diced tomatoes

  • 1 cup cooked shredded chicken (rotisserie chicken works well)

  • 6 cups chicken broth

  • 1 cup Old Pueblo Poblano Salsa Ranchera Sauce

  • 1 teaspoon ground cumin

  • 1 teaspoon chili powder

  • Salt and pepper to taste

  • Juice of 1 lime

  • Fresh cilantro, chopped (for garnish)

  • Avocado slices (for garnish)

  • Tortilla strips or chips (for garnish)
