Huevos Rancheros
Start your morning off right with this delicious breakfast recipe.
Total Time Prep: 15 min. Cook: 20 min. Makes 2 servings

Ingredients
2 tablespoons canola oil
4 corn tortillas
1 tablespoon olive oil
1/2 cup onion, chopped
3 tomatoes, chopped
1/2 cup roasted green chili
1 cup chorizo (cooked)
2 cups refried beans (heated)
4 eggs, cooked any style (recommend sunny side up)
1 cup Queso fresco (optional)
Old Pueblo Poblano Authentic Hot Sauce (or for more spice; Salsa Ranchera) (to taste)
Directions
Heat canola oil in a heavy skillet. Place tortillas carefully into the hot oil, one at a time, and fry for 20 to 40 seconds on each side or until lightly crisp and golden. Drain on paper towels.
Heat oil in a saucepan and sauté chorizo and onions until cooked thoroughly. Add tomatoes and chili, and sauté for an additional 3 minutes. Continue to cook until most of the liquid has been absorbed, about 7 to 10 minutes.
To assemble, place a tostada (fried tortilla) on a serving plate; spoon on refried beans to cover tortilla, add layer of cooked chorizo, top with cooked tomato and green chili, top with cooked egg (any style) then sprinkle with queso fresco.
Top with Old Pueblo Poblano Authentic Hot Sauce (or for more spice; Salsa Ranchera)
